Low Carb Taco Stuffed Avocado

  • 3/4 - 1 pound ground turkey
  • 1/2 teaspoon Himalayan salt plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup red bell pepper finely diced
  • 1 tablespoon sliced olives
  • 3 tablespoons tomato sauce
  • 3/4 teaspoon taco seasoning
  • 1/2 cup shredded Colby Jack or cheddar cheese plus more for topping
  • 2-3 medium Haas avocados cut in half and pits removed
  • 2-3 tablespoons shredded cabbage red & green
  • 2 tablespoons fresh chopped cilantro


  1. In a large skillet, add turkey and brown until cooked through. Drain any grease then season with salt and black pepper.

    Add bell pepper, olives, tomato sauce, taco seasoning and stir to evenly combine ingredients. Allow to cook for 2-3 minutes, until heated through. Taste and adjust seasonings. Remove skillet from heat and stir in shredded cheese.

  2. Fill each avocado half with 2-3 tablespoons of the turkey mixture. Sprinkle with cabbage, fresh cilantro, additional cheese and serve.
