This Keto Broccoli with Garlic is an easy low carb side dish perfect for any weeknight meal. Best of all, so simple & even the kids will love this simple and delicious baked broccoli.

This Keto Broccoli with garlic is easily one of our family’s favorite side dishes. We love making a big batch on our Sunday meal prep to serve with our meals throughout the week.

Roasted Broccoli is the perfect make ahead side dish and goes great with just about any protein: chicken, fish, turkey, ham, steak etc.

You can keep it as simple as you like with some olive oil, salt and black pepper. Baked broccoli makes a tasty gluten free, vegan, Whole30, low carb, and keto / paleo friendly side dish.

Dress it up with some fresh lemon juice, red pepper flakes and even some shaved Parmesan. The hardest part is not eating it all straight off the pan!

No matter what way you choose, you simply can’t go wrong with this simple yet elegant side dish.

Make this easy side dish recipe on busy weeknights and special holidays. Thanksgiving, Christmas, Easter – no matter the occasion, this broccoli will disappear quickly.

HOW TO MAKE KETO BROCCOLI WITH GARLIC:

  1. Wash and dry the broccoli thoroughly. Cut the broccoli florets into relatively uniform bite-sized pieces.
  2. Preheat oven to 400 F.
  3. Cut into medium-sized spears.
  4. Coat broccoli with olive oil, garlic, lemon juice and salt and pepper to taste. Feel free to add red pepper chili flakes, grated Parmesan or any other herbs or seasonings you like.
  5. Spread onto a large baking sheet in a single layer – being careful not to overcrowd the pan. Feel free to line your baking sheet with parchment paper or foil for easier clean up.
  6. Bake for 22-25 minutes or until tender and caramelized. I like to wait until the edges are brown with some burnt edges – SO good!! Serve and enjoy.

TIPS FOR MAKING THE BEST LOW CARB BROCCOLI:

Roasting broccoli couldn’t be easier and I find it brings out the best flavor. But in case you still have questions, here are a few key tips to help baked broccoli taste amazing:

  • DRY your broccoli thoroughly after washing – use a salad spinner or pat it down with paper towels
  • Do NOT overcrowd the pan – it’s important to spread the broccoli out into a single layer on the pan – use two pans if you must otherwise, you’ll end up steaming your broccoli and won’t get those crispy char edges which is what we want
  • High heat – crank up your oven temperature to at least 400 F so your broccoli cooks up tender with caramelized edges
  • Shake and rotate the pan – you can also use a spatula to flip each piece for even cooking

Ingredients

  • 1 1/2 pounds broccoli cut into florets - washed and dried thoroughly
  • 2-3 tablespoons olive oil
  • sea salt and freshly cracked pepper to taste
  • 4 cloves garlic minced or smashed
  • 1 tablespoons freshly squeezed lemon juice
  • Optional additions:
  • red pepper flakes
  • Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Toss broccoli florets with olive oil, garlic, lemon juice and season with salt and pepper to taste. Add optional seasonings as desired.
  3. Spread broccoli florets in a single layer onto a large rimmed baking sheet. You can line it with parchment paper or foil (for easier clean up).
  4. Roast for 15 minutes then remove tray. Shake and rotate the pan. Return to oven and roast for an additional 8-10 minutes or until tender with charred edges. Serve immediately.
